1 lb boneless, skinless chicken thighs

2 tablespoons cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons vegetable oil

1 cup cooked jasmine rice

1 cup shredded carrots

1 cup chopped cucumber

1/2 cup edamame (cooked)

1/4 cup chopped green onions

1/4 cup cilantro, chopped

Bang Bang Sauce:

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice)

1 teaspoon lime juice

Instructions
 

In a mixing bowl, coat the chicken thighs with cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure the chicken is evenly coated.

    Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken and cook for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes before slicing into bite-sized pieces.

      While the chicken is cooking, prepare the Bang Bang sauce by combining mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl. Mix well and set aside.

        In serving bowls, layer the cooked jasmine rice, followed by the sliced Bang Bang chicken.

          Top the bowl with shredded carrots, chopped cucumber, and edamame.
