Bang Bang Chicken Bowl

Ingredients
  

For the Chicken:

1 lb boneless, skinless chicken breasts, cubed

1/2 cup cornstarch

1 large egg

1/2 cup panko breadcrumbs

Salt and pepper, to taste

Oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

For the Bowl:

2 cups cooked jasmine rice

1 cup shredded green cabbage

1 cup julienned carrots

1/2 cup chopped green onions

Fresh cilantro, for garnish

Sesame seeds, for garnish

Instructions
 

Prepare the Chicken:

    - In a bowl, season the cubed chicken with salt and pepper.

      - In a separate bowl, whisk the egg.

        - Place the cornstarch in another bowl.

          - Dip each piece of chicken first into the cornstarch, then into the egg, and finally coat with panko breadcrumbs.

            Fry the Chicken:

              - In a large skillet or deep fryer, heat oil over medium-high heat.

                - Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes.

                  - Remove and drain on paper towels.

                    Make the Bang Bang Sauce:

                      - In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, and lime juice until well combined.

                        Assemble the Bowl:

                          - In serving bowls, start with a base of jasmine rice.

                            - Top with shredded cabbage, julienned carrots, and fried chicken.

                              - Drizzle with Bang Bang sauce and garnish with chopped green onions, fresh cilantro, and sesame seeds.
