Ingredients

For the Homemade Banana Bread:

3 ripe bananas, mashed

1/3 cup melted butter

1/2 cup sugar (can substitute half with brown sugar for extra depth)

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup all-purpose flour

1/2 cup chopped walnuts or pecans (optional)

For the Bananas Foster Topping:

2 ripe bananas, sliced

1/4 cup unsalted butter

1/2 cup brown sugar

1/4 cup dark rum (optional, can be omitted)

1 teaspoon cinnamon

1 teaspoon vanilla extract

2 large eggs

1 cup milk

1/2 teaspoon nutmeg

8 slices of your homemade banana bread

Whipped cream or vanilla ice cream (for serving)

Instructions

Step 1: Prepare the Homemade Banana Bread

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.

In a mixing bowl, combine the mashed bananas and melted butter. Mix well until smooth.

Add sugar, egg, and vanilla extract to the banana mixture and mix until combined.

Sprinkle the baking soda and salt over the mixture and mix again.

Stir in the flour until just incorporated. If you’re using nuts, fold them in gently.

Pour the batter into the greased loaf pan and bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.

Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Step 2: Prepare the Bananas Foster Topping

In a skillet over medium heat, melt the butter. Add the brown sugar and cinnamon, stirring until the sugar is caramelized (about 2-3 minutes).

Stir in the sliced bananas and cook for an additional 2 minutes, gently tossing to coat.

If using rum, carefully add it at this point and ignite with a long lighter (if desired). Allow the flames to extinguish, absorbing the flavor.

Remove the banana mixture from heat and set aside.

Step 3: Make the French Toast

In a shallow bowl, whisk together the eggs, milk, vanilla extract, and nutmeg.

Slice the cooled banana bread into 1-inch thick pieces.

Heat a griddle or non-stick skillet over medium heat and lightly grease it with butter or spray.

Dip each slice of banana bread into the egg mixture, ensuring both sides are soaked but not saturated.

Place the dipped slices on the griddle and cook for 2-3 minutes per side, or until golden brown.

                                        Step 4: Assemble and Serve

Place the French toast on serving plates. Spoon the warm bananas Foster topping over the toast generously.

Serve with whipped cream or a scoop of vanilla ice cream on the side for an indulgent touch.
