1 cup ripe bananas, mashed (about 2 medium bananas)

1 cup rolled oats

1/2 cup almond flour (or whole wheat flour)

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup fresh or frozen blueberries

1/4 cup chopped walnuts (optional)

1/4 cup dark chocolate chips (optional)

Instructions
 

Preheat Your Oven: Begin by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, cinnamon, and salt. Stir well until all the dry ingredients are evenly distributed.

      Combine Wet Ingredients: In another bowl, mix the mashed bananas, honey (or maple syrup), and vanilla extract until smooth and well blended.

        Combine Wet and Dry Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined. Gently fold in the blueberries, walnuts, and dark chocolate chips if using. Be careful not to overmix to keep the blueberries whole.

          Scoop Cookies: Using a cookie scoop or a tablespoon, drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

            Flatten Cookies: Gently flatten each cookie with the back of a spoon or your fingers, as they won’t spread much during baking.

              Bake: Place the baking sheet in the oven and bake for 12-15 minutes, or until the edges are lightly golden and the tops look set.

                Cool: Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
