Ingredients

4 medium russet potatoes, washed and scrubbed

1/4 cup olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: 1/4 teaspoon red pepper flakes (for a spicy kick)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Potatoes: Cut each potato in half lengthwise and then cut each half into wedges (about 6-8 wedges per potato, depending on size).

Make the Garlic Mixture: In a small bowl, combine the olive oil, minced garlic, Italian seasoning, paprika, salt, and black pepper. Mix well until fully combined.

Coat the Wedges: Place the potato wedges in a large bowl. Pour the garlic mixture over the potatoes and toss well to ensure all wedges are evenly coated.

Add Parmesan: Sprinkle the grated Parmesan cheese over the coated potato wedges. Toss gently again until the cheese adheres to the wedges.

Arrange on Baking Sheet: Lay the potato wedges out in a single layer on the prepared baking sheet, making sure they aren't overlapping to ensure they get crispy.

Bake: Place the baking sheet in the preheated oven. Bake for 25-30 minutes, turning the wedges halfway through, or until they are golden brown and crispy on the outside and tender on the inside.

Garnish and Serve: Once done, remove the potato wedges from the oven. Sprinkle with chopped fresh parsley and, if desired, red pepper flakes for added heat. Serve hot with your favorite dipping sauce.
