8 oz (about 225g) pasta (penne or farfalle works well)

1 block (8 oz) of feta cheese

2 cups cherry tomatoes, halved

4 cloves of garlic, minced

1/2 cup extra virgin olive oil

1 tsp dried oregano

1/2 tsp crushed red pepper flakes (optional for heat)

Salt and black pepper to taste

2 cups fresh spinach

Fresh basil leaves for garnish

Grated Parmesan cheese (optional for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large baking dish, add the cherry tomatoes, feta cheese, minced garlic, olive oil, oregano, crushed red pepper flakes (if using), salt, and pepper. Toss everything together to coat the tomatoes and feta evenly.

      Bake: Place the baking dish in the oven and bake for about 30 minutes or until the tomatoes are blistered and the feta is soft and golden.

        Cook the Pasta: While the feta and tomatoes bake, cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.

          Combine Ingredients: Once the feta and tomatoes are ready, remove the dish from the oven. Use a fork to mash the feta and mix it with the melted tomatoes until you have a creamy sauce. If the sauce is too thick, add reserved pasta water gradually until you reach your desired consistency.

            Mix It Up: Add the cooked pasta and fresh spinach to the baking dish. Toss everything together until well combined. The heat from the pasta will wilt the spinach.
