8 ounces elbow macaroni

6 slices of thick-cut bacon

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

Salt and pepper, to taste

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup panko breadcrumbs

2 tablespoons olive oil

1/4 cup grated Parmesan cheese

Fresh chives or parsley, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet, cook the thick-cut bacon over medium heat until crispy, about 6-8 minutes. Remove bacon from skillet and drain on paper towels. Reserve about 2 tablespoons of bacon grease in the skillet and crumble the bacon once cooled.

      Make the Roux: In the same skillet, melt 2 tablespoons of butter in the reserved bacon grease over medium heat. Whisk in the flour, cooking for about 1 minute until lightly golden.

        Create the Cheese Sauce: Gradually whisk in the whole milk, stirring continuously to avoid lumps. Bring the mixture to a simmer and cook for about 5-7 minutes until it starts to thicken. Stir in the Dijon mustard, smoked paprika, garlic powder, salt, and pepper.

          Add the Cheese: Remove the skillet from the heat and stir in the shredded cheddar and mozzarella until melted and smooth.

            Combine Pasta and Sauce: Add the cooked macaroni and crumbled bacon to the cheese sauce, stirring until well combined.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased 9x13 inch baking dish.

                Make the Topping: In a small bowl, mix the panko breadcrumbs with olive oil and grated Parmesan cheese. Sprinkle this breadcrumb mixture evenly over the macaroni and cheese.

                  Bake: Bake in the preheated oven for 25-30 minutes until the top is golden brown and crispy.

                    Serve: Let it cool for a few minutes before serving. Garnish with chopped fresh chives or parsley if desired.
