Ingredients
  

3 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1 cup corn kernels (fresh or canned)

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Instructions
 

In a large mixing bowl, combine the diced avocados, cherry tomatoes, cucumber, red onion, corn, and cilantro. Gently toss to mix the ingredients without mashing the avocados.

    In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and red pepper flakes, if using.

      Drizzle the dressing over the salad, and gently toss to coat all ingredients evenly.

        If desired, sprinkle crumbled feta cheese on top for added flavor.
