2 pounds chicken, cut into pieces (preferably bone-in)

3 tablespoons Jamaican curry powder

1 teaspoon allspice (pimento) powder

1 teaspoon salt (to taste)

½ teaspoon black pepper

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 medium onion, diced

2 green onions (scallions), chopped

1 large carrot, sliced

1 bell pepper, diced (preferably green)

2 cups coconut milk

2-3 sprigs fresh thyme (or 1 teaspoon dried thyme)

2-3 Scotch bonnet peppers (whole; adjust for spice preference)

2 tablespoons vegetable oil

1-2 cups water (as needed)

Lime or lemon juice (for marinating)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken pieces with lime juice, curry powder, allspice, salt, black pepper, garlic, and ginger. Mix well, ensuring the chicken is fully coated. Cover and refrigerate for at least 1 hour, preferably overnight for optimal flavor.

    Heat the Oil: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat until hot.

      Brown the Chicken: Add the marinated chicken pieces to the pot in batches, browning them on all sides for about 5-7 minutes. Remove the chicken and set aside.

        Sauté the Vegetables: In the same pot, add diced onion, green onions, carrot, and bell pepper. Sauté for about 5 minutes until softened.

          Add Coconut Milk and Chicken: Pour in the coconut milk and return the browned chicken to the pot. Stir in the fresh thyme and whole Scotch bonnet peppers. Adjust seasoning if needed.

            Simmer: Bring the mixture to a gentle boil, then reduce heat to low. Cover and let it simmer for 30-40 minutes, or until the chicken is tender and the sauce has thickened. Stir occasionally and add water if the sauce becomes too thick.

              Final Touches: Once the chicken is cooked through, taste for seasoning and adjust if necessary. Remove the Scotch bonnet peppers before serving unless you like it spicy!
