2 medium-sized apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

1 cup powdered sugar (for icing)

2 tablespoons milk (for icing)

Prepare the Apples: Start by peeling and dicing the apples into small pieces. Set aside.

    Make the Batter: In a medium bowl, whisk together the flour, granulated sugar, cinnamon, nutmeg, baking powder, baking soda, and salt. In another bowl, beat the egg and mix in the milk and vanilla extract. Slowly combine the wet ingredients into the dry ingredients until just mixed. Fold in the diced apples until well-coated.

      Heat the Oil: In a deep skillet or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). You can test the oil readiness by dropping a small amount of batter in; it should sizzle and rise to the top.

        Fry the Bites: Use a tablespoon to drop small amounts of the apple batter into the hot oil. Fry in batches, making sure not to overcrowd the pan, for about 2-3 minutes on each side, or until golden brown and puffed up. Remove with a slotted spoon and place on paper towels to drain excess oil.

          Prepare the Icing: In a small bowl, whisk together the powdered sugar and milk until smooth. The icing should be a drizzling consistency. You can add more milk if it’s too thick.
