4 boneless, skinless chicken breasts

1/4 cup olive oil

2 lemons (zested and juiced)

3 cloves of garlic (minced)

2 tbsp fresh parsley (chopped)

1 tbsp fresh thyme (chopped)

1 tsp salt

1/2 tsp black pepper

Instructions
 

In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme, salt, and black pepper to create a marinade.

    Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours for extra flavor).

      Preheat the grill to medium-high heat.

        Remove the chicken from the marinade and discard the remaining marinade.

          Grill the chicken for about 6-7 minutes per side or until it reaches an internal temperature of 165°F (75°C) and has nice grill marks.

            Remove from the grill, let it rest for 5 minutes, and serve with a garnish of lemon slices and additional parsley if desired.
