200g fresh udon noodles

3 tablespoons chili oil (store-bought or homemade)

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 green onion, finely sliced

1/2 cup baby spinach or bok choy

1 tablespoon roasted sesame seeds

Optional: 1 soft-boiled egg, for topping

Instructions
 

Boil Noodles: In a pot of boiling water, cook the udon noodles according to package instructions (usually about 2-3 minutes for fresh noodles). Once done, drain and set aside.

    Prepare Sauce: In a large pan or wok, heat the chili oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant (be careful not to burn).
